It may be common sense for those involved in hygiene management, but it is best to separate serving carts and dish return carts. By making the process from serving to dish return a one-way system, we can prevent cross-contamination. However, many facilities do not separate them in practice. In facilities that provide collective meals, such as hospitals and nursing homes, operations are likely based on the Ministry of Health, Labour and Welfare's "Hygiene Management Manual for Large-Scale Cooking Facilities."
